This delicious and easy to make soup is perfect to make when you're feeling lazy - just throw everything into a slow cooker and you're done!
Ingredients:
1 small sweet onion, chopped
3 garlic cloves, minced
3 cups of chicken broth (I used low sodium)
1 can of creamy tomato soup
I can of black beans, drained and rinsed (I used low sodium beans)
1 can of diced tomatoes
1 can of whole corn kernels
1 pound chicken breast
1 tsp ground cumin
1 tbsp cilantro
Optional to add hot peppers for spice! I threw in some jalapeños
Toppings (optional):
Shredded cheddar cheese
Chopped scallions
Avocado
Sour cream
Fresh cilantro
Directions:
Saute onion and garlic in a pan on medium heat until soft. Add into the slow cooker. Next add broth, tomato soup, beans, diced tomatoes, corn, and spices. Stir well and then add uncooked chicken.
Cover and cook on low for 5-6 hours.
Remove chicken and shred it with a fork and mix back into the pot.
Serve, add desired toppings, and enjoy!
