Believe it or not, this peanut sauce was so quick and easy to make and can transform an average dinner into an extraordinary one! You'll definitely want to add this recipe to your weekly menu.
Ingredients:
1 lb of chicken
2 tbsp of olive oil
4 tbsp of peanut butter
1 cup of chicken broth
1 tbsp of hot chili sauce
1 tsp of brown sugar
1/2 cup of hoisin sauce
Minced garlic to taste
1 cucumber, pealed and sliced thinly
Jasmine rice
Sesame seeds
Chopped green onion
Chopped cilantro
Directions:
I used pre-cooked chicken for this recipe, but you can quickly saute chicken thighs or breasts in a skillet using medium heat and olive oil. Cook chicken until lightly browned and cooked through - I find it helps to cut the chicken into small cubes first. Place chicken to the side in a bowl.
Add minced garlic, olive oil, and chili sauce into a skillet over medium heat. Cook for one minute until browned. Add chicken broth, peanut butter, brown sugar, and hoisin sauce to the pan. Mix all ingredients together and bring to a light boil.
Remove sauce from heat and mix in cooked chicken.
Serve on top of jasmine rice and garnish with sliced cucumbers, green onions, cilantro, and sesame seeds.
