Healthy Chicken Pasta Salad

Need something new and nutritious to try for lunch or a tasty side? Look no further!



Ingredients:

  • 2 cooked and shredded chicken breasts

  • 1/4 cup soy sauce and honey for chicken marinade

  • Avocado

  • 1 pound of rotini pasta

  • 1 cup of cherry tomatoes

  • 1/2 cup of chopped red onion

  • 1/4 cup of chopped cilantro

  • Dressing of your choice: I used ALDI's House Vinaigrette. Other great options would be Italian, Garlic Vinaigrette, Onion Vinaigrette, Olive Oil & Vinegar, or you can make your own by combining: 1/4 cup of white wine vinegar + 1 tbs Italian seasoning + 1 tsp garlic powder + 3/4 extra virgin olive oil + salt and pepper.

Directions:

  1. Add chicken breasts, soy sauce, and honey to a slow cooker and set on high for 3 hours. Shred with a fork once time is up!

  2. Boil rotini pasta, drain and add to large bowl.

  3. Cut up tomatoes, onion, avocado and cilantro.

  4. Combine chicken, pasta, and veggies to the bowl. Drizzle with vinaigrette, toss, and enjoy immediately or chill for later!
