Homemade Lemon Blueberry Glazed Scones

Want to impress people with your baking skills but need a low effort recipe to follow? Look no further! These delicious scones are the perfect mix of fluffy and flaky with blueberries that will burst with flavor in your mouth. Can be made with or without the sweet lemon glaze, but I highly recommend using with.



Ingredients:

  • 2 cups of all purpose flour

  • 1 tbsp baking powder

  • 3 tbsp of granulated sugar

  • 6 tbsp chilled unsalted butter, cut into cubes

  • 1/2 tsp salt

  • 1 cup of fresh blueberries

  • 2 lemons for lemon zest (about 2 tbsp)

  • 3/4 cup of buttermilk

Glaze:

  • 1 cup of powdered sugar

  • 1/4 cup of buttermilk

  • 1 tbsp of lemon zest

  • 1/2 tsp of fresh squeezed lemon juice


Directions:

  1. Preheat oven to 400 degrees.

  2. Form dough into a ball and then flatten into a 1-inch thick circle. Transfer circle onto a baking sheet lined with parchment paper. Cut the circle into 8 "pie" looking slices. Separate slices to be one inch or more apart.o scone success. The cold butter will coat the flour that creates the crumbs. When these crumbs cook in the oven, it creates a beautiful fluffy texture!

  3. Fold in blueberries and then add buttermilk. Gently mix to form dough. Do not over mix!

  4. Form dough into a ball and then flatten into a 1-inch thick circle. Transfer circle onto a baking sheet lined with parchment paper. Cut the circle into 8 "pie" looking slices. Seperate slices to be one inch or more apart.

  5. Place in oven and bake for 15 minutes. Once timer is up, remove from oven and set aside to cool for 10 minutes.

  6. While cooling, mix together all glaze ingredients. Drizzle scones with desired amount of glaze. Note: glaze will firm up when scones are completely cool!

  7. Serve and enjoy :)
