Cinnamon-Vanilla Chocolate Chip Scones

Craving something sweet to go with your morning coffee? These healthy scones will do just the trick! P.S. they taste like coffee cake!


Ingredients:

  • 1 1/2 Cups Coconut Flour (or any flour of choice)

  • 1 Scoop of Vanilla Protein Powder (I used Ideal Lean)

  • 1 1/2 Tsp Cinnamon

  • 1/2 Cup Sugar Free Maple Syrup

  • 1/2 Cup Vegan Butter Chilled

  • 1/3 Cup Chocolate Chips (I used Dairy Free Enjoy Life)

  • 1/4 Tbsp Salt

  • 2 Tsp Baking Powder

Glaze (Optional):

  • 1/2 Cup Powdered Sugar + 1 Tbsp Almond Milk

Directions:

  1. Pre-heat oven to 400 degrees.

  2. Combine dry ingredients together then mix in maple syrup and chilled butter using a wooden spoon. I did not use an electric blender, as it helps to keep the dough chunky to stay together when baking!

  3. Turn out onto a parchment lined baking sheet and roll the dough into a circle and flatten. Think of a 1 inch thick pizza dough! Use a large knife to cut each round into wedges. Gently lift and separate the wedges from one another to give room to bake.

  4. Bake for 20 minutes. Remove from oven and let cool for 10 minutes. If desired, make sugar glaze and pour over scones.

  5. Serve and enjoy!
