Ingredients:
1 box of cellentani pasta
1 head of cauliflower, chopped
3/4 cup of canned coconut milk
3 ounces cream cheese
1 squirt of Dijon mustard
1 tsp garlic powder
2 cups shredded cheddar cheese
1 cup shredded parm cheese
2 tablespoons butter
Salt to taste
Pepper to taste
Sprinkle of parsley
Fresh chopped green onion for garnish
Directions:
Boil 4 cups of water in a large pot. Add in pasta and finely chopped cauliflower. Cook for about 7 minutes.
Simmer to a boil. Stir in coconut milk, cream cheese, mustard, and garlic powder. Cook another 5 minutes or until cream cheese is melted.
Turn heat to low. Stir in cheddar cheese, parm cheese, and butter.
Add salt and pepper to taste! Top with chopped green onion.
