Ingredients:
3 medium sized pickled cucumbers
3 cups of white wine vinegar
2 1/2 - 3 cups of water
3 tablespoons of peppercorn
3 cloves of garlic minced
1/4 cup of sweet onion
2 1/2 tablespoons of kosher salt
2 tablespoons of granulated sugar
3 bay leaves
Few springs of fresh dill
Others
Things you can additionally use to your liking! There is no wrong move here, add as many or few ingredients as you like!
Additional veggies- I used cherry tomatoes and cauliflower
Mustard seeds
Coriander seeds
Fresh or dried herbs- thyme, oregano, or rosemary work great
Directions:
Prepare the cucumbers by cutting them into rounds
Add cucumbers, onions, fresh dill, and any additional veggies into a mason jar. Leave 1/2 inch at the top of the jar to fill with brine. This should be packed tightly!
Make the brine. Do this by combining vinegar, water, peppercorn, garlic, and remaining spices into a pot. Bring the pot to a boil and do so until salt and sugar are dissolved. This should take about 10 minutes.
Let the brine cool, then pour into mason jars.
Cover tightly and let sit overnight in the fridge! For best results, allow pickles to sit for 24 hours. These can be stored in your fridge for 2 months.
