Can't take credit for this recipe but it was too good not to share! This was a great one and done, one pan dinner from Alex Guarnaschelli's cookbook "Cook with Me". Great for a healthy quick meal.
Ingredients:
15-20 brussels sprouts, quartered
2 tbsp olive oil
Red pepper flakes to taste
1/2 tsp pumpkin spice
2 tbsp sugar
1 1/2 inch thick porch chops with bone in
1 tbsp balsamic vinegar
2 tbsp dijon mustard
Salt and pepper to taste
Directions:
Preheat oven to 375 degrees.
In a mixing bowl, toss brussels, olive oil, pumpkin spice, sugar, and red pepper flakes.
Season pork chops with salt and pepper (generously). Spread coated brussels and seasoned pork chops in a baking sheet. Place in over for 20 minutes.
While chops are cooking, mix mustard and balsamic vinegar together in the same bowl that you tossed the brussels.
Take baking sheet out of the oven and finish by browning pork chops by heating olive oil on a pan over the stove. Make sure the oil is hot! Place cooked chops in the pan and let sizzle for 2 minutes each side.
Top with sauce and serve!
