This salad was TOO GOOD and so fresh! Total prep time is 20 minutes to bake the tofu, then toss all other ingredients together and enjoy. That's it!
Ingredients:
Firm Tofu
Spinach
Cucumber slices
Corn on the cob
Pine Nuts
Trader Joes Spicy Peanut Vinaigrette
Directions:
Pre-heat oven to 400 degrees. Press tofu with paper towel to dry. Cut tofu in square chunks and sprinkle with olive oil then season with salt and pepper.
Place tofu on a baking sheet and bake for 20 minutes, flipping tofu after 10 minutes.
While tofu is baking, bring water to a boil. Place ear of corn into the water and boil for 5 minutes. Remove from water and slice kernels off with a knife.
Throw balance ingredients into a bowl, add tofu, and top with vinaigrette.
