A must try this summer! A fun zesty take on salmon that will never get boring!
Ingredients:
1 Skinless Salmon Fillet, cut into 1-inch chunks
Fresh Pineapple
1 Yellow Squash sliced into thick rounds (Zucchini will work well here too!)
Fresh chopped Cilantro
Marinade: (For Salmon)
2 Tbsp reduced sodium Soy Sauce
2 Tbsp Grated Ginger
1 Tbsp Apple Cider Vinegar
1 Tbsp Brown Sugar
3 Cloves of Garlic, minced
1 Tsp Olive Oil
1 Tsp Sriracha
Pinch of Black Pepper
Directions:
Soak skewers in water, about 10-20 minutes
Cut salmon into 1 inch cubes, and let soak in marinade for at least 20 minutes
Cut pineapple and squash. Thread salmon, pineapple, and squash onto skewers. Brush leftover marinade over entire skewer.
Grill skewers, flipping twice, until salmon is cooked all the way through (about 8 minutes).
Remove from grill and top with cilantro!
